My brother brought me some eggplant yesterday. I wasn’t sure what to make other than Eggplant Parmesan, but since I’m doing the Whole30, a breaded cheesy dish is out. I searched online for other things to do with eggplant and came up with not a lot of options I thought my kids would go for. I did see some recipes that called for breading with almond flour. So, I pulled out an egg, some almond flour, garlic powder, parsley, salt, pepper.
First, I scrambled the egg in one bowl. In a second bowl, I added the spices to the onions flour. Then I peeled the eggplant in an attempt to make the whole thing more palatable to my kids and cut the eggplant into french fry like pieces.
Then, I dipped the pieces in the egg mixture.
I dropped those egg coated pieces into the flour mixture.
I had some Crisco on hand from Christmas baking so I heated that up in a pan and dropped the breaded eggplant pieces in.
Once they were golden brown, I scooped them out and let them sit on a paper towel to soak up the grease.
And finally, it was time for the test. The kid test. Two of three said two thumbs up. One said meh, but I wasn’t surprised since he’s my toughest critic. 😆 I thought they were delish. Best eaten right away since they get a bit soft if they sit too long.
As a final testament to their deliciousness, a few hours later, one of my kids asked me to make them again. I call that a success!
