The Quest for a Blueberry Coconut Flour Muffin that Looks Pretty

I’ve been doing the Whole30 for the last few months (yeah, I know that makes it the Whole…and counting) and while baked goods are not compliant with the rules of the meal plan, I’ve been making baked goods for the kids to eat in the morning. Who knew coconut flour was so tricky to bake with? Well, anyone who’s ever used it. But anyhoo. My first attempts were pretty flat. Tasty, but a bit bricklike. 

Today I finally got closer to a decent looking muffin. I found it on The Radiant Life Blog. They scored high on the kid enjoyment index.

  1. Have you tried adding an extra egg in the dough? It always work for my preps 🙂
    Anyway, if they’re tasty it doesn’t matter if they don’t look pretty! 🙂

    1. Cool! I started it while on sabbatical and made the whole family do it. 😬 I spent pretty much my whole day prepping and cooking in order to please picky kid palates. But it was worth it. We’re mostly paleo now and I’m still doing the Whole30.
